These data are from The
Health Professionals Follow-up Study of 51,529 male health professionals. To
assess dietary patterns, a 131-item food-frequency questionnaire was
administered in 1986, 1990, and 1994. Using factor analysis based on data
from these questionnaires, two major dietary patterns, “prudent” and
“western”, were validated. A prudent diet was characterized by the
consumption of more vegetables, fruit, fish, poultry, and whole grains. A
western diet was characterized by a higher consumption of red meat, processed
meat, french fries, high-fat dairy products, refined grains, and sweets and
desserts.
